Chitosan can be used in fresh vegetables, meat products, seafood, starch, soybean products, eggs, milk and soybean products.
Due to the effect of physiological ripening, fruits and vegetables will be softened, resulting in a decline in hardness, which brings difficulties to transportation, quality and nutritional value decline, and the resistance to bacteria will also weaken. Therefore, how to keep fruits and vegetables fresh has been concerned for a long time. Chitosan has film-forming property, which is not only harmless to human body, but also has physiological health care function, and its protective effect on fruits and vegetables has been affirmed by people more and more. Covering the surface of fruits and vegetables with chitosan can reduce transpiration of fruits and vegetables, and it has certain selective permeability to gases. It can prevent the outside O2 from entering the membrane, improve the content of CO2 in fruits and vegetables tissues, and reduce ethylene leakage, thus reducing the respiratory and metabolic intensity of fruits and vegetables, slowing down the ripening of fruits and vegetables, and achieving the purpose of keeping fresh.
Chitosan had obvious fresh-keeping effect on chilled pork, and the higher the degree of deacetylation, the better the fresh-keeping effect of chitosan on cooled pork was. The shelf life of chilled meat reached 1 week with 1% chitosan solution dissolved in 1% acetic acid and the sensory quality of chilled meat was good. 2. The fresh-keeping effect of 5% water-soluble chitosan solution was slightly lower than that of 1% acid-soluble chitosan, but the chilled meat samples treated with water-soluble chitosan had no sour taste at all, and the sensory quality was good.
Chitosan is an excellent natural anti-bacterial antioxidant for seafood rich in unsaturated fatty acids. It is prepared by snow crab with different molecular weights of chitosan with a concentration of 50-200mg/kg, which can effectively control the lipid oxidation of cod meat in the cooking process. Moreover, the higher the concentration is, the stronger the antioxidant capacity will be.
